Butchery Basics

Produced and directed this series of butchery education videos as part of a relaunch of ChefSteps’ premium content subscription.

Hosted by expert butcher Tom Coss of Bateau, each episode details how to break large beef cuts into individual steaks, roasts, and trimmings.

Interspersed throughout are secondary techniques: basic knife skills, cow anatomy, how to talk to your local butcher, and tips for maximizing flavor when cooking. The series was designed to work alongside longer articles to provide step-by-step instruction and inspire ambitious home cooks.
